Ultimate Crab Cake, 2008

I was inspired to create this image for a food themed art show and because it is one of my favorite sandwiches. A local Maryland favorite, the crab cake sandwich makes for an excellent lunch or dinner. I have tried them in other parts of the country and no one can make them as well as we do right here in Maryland. You have to use the backfin meat from the Maryland Blue Crab and keep the meat as lumpy as possible. Oh, I almost forgot to mention to lay off the breadcrumbs and this crab cake will be the most ultimate dining experience!
